Pumpkin Pancakes (Gluten-Free, Nut-Free, Sugar-Free)
“Oh My Goodness! This is awesome” said Ulrich Link (husband) and Vanessa Link (Daughter) at the breakfast table. Fluffy, moist, nice texture. Makes regular pancakes taste like paper in comparison. Vanessa’s boyfriend popped in and had one and said “These can’t be sugar-free! WOW!”
I used a combo of Coconut Flour and Oat Flour (in honor of those with nut-allergies) and Monk Fruit as the Sweetener.
