Coconut Lime Cake
  1. Preheat oven to 350.
  2. In a large bowl mix the eggs, coconut oil, coconut milk, apple sauce, vanilla extract, lime juice, and lime zest,
  3. In another bowl, mix the flours, just like sugar, stevia, cinnamon, baking powder, baking soda and himalayan salt.
  4. Add dry ingredients to wet ingredients and mix well.
  5. Grease two 8 inch round cake pans with coconut oil and dust them with arrowroot starch.
  6. Pour mixture into greased pans.
  7. Bake 40-45 minutes Check middle with fork to see if done.
  8. Remove from oven and let cool in the pans for 10-15 minutes. Then turn them out onto a cooling rack and cool completely.
  9. Place your first layer on your cake stand. Spread glaze on it and use a small offset spatula to make glaze an even layer
  10. Place top layer onto lime glaze. Spread glaze on it and use a small offset spatula to make glaze an even layer.
Lime Glaze
  1. While the cake is in the oven warm up the coconut butter in a small saucepan over very low heat.
  2. After the coconut butter has melted add maple syrup, lime juice and vanilla extract. Mix well and remove from heat.
  3. Let the glaze cool down for 10 minutes before spreading onto cake.
